This heavy cast iron French oven (or Dutch oven) is the choice of some of the world’s best chefs. It features an interior black matte enamel finish that is an excellent surface for braising; the self basting spikes on the tight-fitting lid completes an ideal environment for sumptuous stews, roasts, soups, casseroles and other one-pot classic dishes. The cast iron is forged in a single-use mould and all imperfections are meticulously trimmed to deliver even thickness, as a result, the French oven absorbs heat quickly, distributes it evenly and gently, and retains the heat long after removal from the heat source. The cookware is coated with two or three coats of enamel and baked at 800C/1400 degrees F after each coating for extra durability; the hygienic, impermeable enamelled surface means the cookware can be used for marinating food prior to cooking or for food storage after cooking, and it protects the cookware against rusting. Due to the superior construction of the lid, less humidity can escape during the cooking process. The lid’s self-basting spikes create a continuous natural basting cycle; moisture collects on the lid, condenses on the spikes and falls evenly throughout the dish creating a tender, flavourful meal.
